Town 'n' Country Chicken with String Beans & Tomato

Inspired by the bold yet comforting flavors of Town 'n' Country’s vibrant Latino community, this chicken dish is a nod to home cooking where the skillet does all the storytelling. Juicy chicken breast, crisp-tender string beans, and sweet tomatoes come together kissed with garlic, onion, and love. A sprinkle of fresh cilantro on top ties it all together—fresh, bright, and unmistakably Tampa Bay.

What You'll Need:
1 lb. boneless, skinless chicken breast
2 tbsp olive oil
2 cloves garlic, minced
½ yellow onion, thinly sliced
1 cup cherry or grape tomatoes, halved
2 cups fresh string beans, trimmed
½ tsp ground cumin (optional, for warmth)
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Optional: squeeze of lime or splash of vinegar at the end for brightness
Instructions:
Sear the Chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and cumin. Sear until golden and just cooked through. Remove and set aside.
Sauté the Veggies: In the same skillet, add another tablespoon of oil. Cook onion and garlic until fragrant and soft, about 2–3 minutes. Add string beans and cook until just tender, about 5 minutes.
Add Tomatoes & Chicken: Stir in the tomatoes and cook until they soften slightly, 2 minutes. Return chicken to the skillet and toss everything together. Taste and adjust seasoning.
Finish with Cilantro: Remove from heat and sprinkle generously with chopped fresh cilantro. Serve with rice, plantains, or warm tortillas.
